Food Service Technician (Head Cook)
Job Description
Responsible to: Food Service Director
Job Classification: Classified
Payment Rate: Full-time, 9 months per year. Pay rate is $30.56 - $37.42 (Based on years of experience and training)
Nature and scope of job:
Good knowledge of methods, materials and equipment used in cooking a variety of foods on a large scale, along with food values and nutrition. Considerable knowledge of health, sanitary and safety procedures involved in the work. Ability to understand and carry out oral and written communications. Skilled in the preparation and cooking of various foods on a large quantity basis. Ability to document and maintain reports, assist the Food Service Director with managerial duties, and act as a daily site manager in the Sitka High School Kitchen.
Essential Functions:
1. Demonstrate consistent punctuality and regular attendance.
2. Ensure that appropriate and established sanitation and safety standards are maintained per federal and state regulations.
3. Adhere to local, state, federal and other regulatory agencies, standards, codes and laws.
4. Adhere to established district policies and procedures.
5. Work cooperatively and positively with other district employees, the general public, and students.
6. Demonstrate accuracy, attention to detail, and thoroughness; monitor own work to ensure quality.
7. Responsible and confident to work independently.
8. Plan and analyze menus for all schools in the district, ensuring compliance with USDA meal pattern requirements.
9. Prepare (cook) all types of food, such as vegetables, meats, soups, salads, sandwiches and desserts; cook and season food according to recipes; mix ingredients and add condiments according to standardized recipes or as directed; test cooked food to determine if properly cooked and seasoned; prepare hot and cold beverages; portion products for service under the direction of Food Service Director.
10. Enter student data and required nutritional data using the district computer.
11. Recognize and adjust to new or changing conditions and situations.
12. Actively strive for job related self-improvement and participate in district training programs as provided.
13. Follow directions and perform other incidental food service program related duties as assigned by the Food Service Director.
14. Demonstrate accuracy with a school lunch software program by updating daily meal counts and production records.
15. Forecast meal counts and quantities. Track meal and daily participation trends to help plan new items, avoid repeating items, and remove discontinued items.
16. Compile order guides and lists each week for food service deliveries and orders from Food distributors.
17. Supervise operations in Sitka High School kitchen daily.
18. Plan, cook, and understand special meal accommodations in accordance with USDA Meal Accommodation requirements.
19. Verify and check-in USDA Commodity foods.

Physical Demands
1. Lower body strength to kneel, stand, and walk throughout the workday.
2. Upper body strength to correctly lift up to 50 pounds and carry more than 25 feet.
3. May sit or stand for extended periods of time.
4. Must be capable of bending at the waist, kneeling, crouching, reaching above shoulder level and bending the arms at the elbow and wrist.
5. Verbal stamina to articulate clearly and with appropriate volume throughout the workday.
6. Auditory discrimination sufficient to receive detailed information through normal speech at 5 feet and warning cries or alarms at normal speech levels.

Education, License, Certification, or Formal Training:
1. High school diploma or equivalent required.
2. Possess or able/eligible to obtain an “Alaska Food Handler” card.
3. Be certified in a minimum 8-hour course and score satisfactory on ServeSafe Manager Certificate exam.
4. Valid Alaska Driver’s license.
